A Unique Experience In Each Roll

… say what?!!!  :-) 

I am talking about a very special restaurant in New Haven.  A sushi place at first glance, but so much more as you settle in and begin your adventure.  

Chef Bun Lai had a mission:  To take sushi beyond.   He wanted to think and explore out of the box and see if others share his passion.  And so Miyas Sushi was born.  It is the first sustainable sushi restaurant in the world, focusing on hyper local seafood - caught most mornings by Chef Lai himself.

Chef Lai’s inspiration: His mother.  His mother originally started a catering business from her home.

The 24 some page menu will make you realize that this is no ordinary place.  Some menu items come with a story or a shared experience so that the diner can get a glimpse into the mind and heart of the chef behind it.  We tried many dishes during our visit, and I think it is safe to say that I could pretty much close my eyes and point to order any item on the menu.  And when the time comes to put it in my mouth - I will most certainly exclaim “Oh! Wow!”.  Each dish unique, each a complex choreography of flavors and textures…. there was never a dull dining moment here.  

Chef Lai recommended that we start our meal with his special Miso Soup because it is like no other.  He was right.  Far more flavorful than any Miso Soup I have had until now, the secret lies in boiling the seaweed for hours instead of using just any ordinary stock recipe as the base for this soup.  As we chatted with Chef Lai about his menu, we asked him for recommendations.  He warned us that after we place our order, he will take liberty of fine tuning the order to give us the most comprehensive experience of his food.  And so he did.  One after the other the dishes came to our table and each was truly unique …. like the Best crunchy Roll Ever which was so wonderfully flavored with chilli pepper, or the Lost Tribe Of Chiang Roll which offers an amazing marriage of sweet, salty, and tart flavors, or the Kanibaba which was such a dynamite presentation and an absolute thrill to eat!  I am not going to explain why this dish is so special, because it will ruin the surprise for you.  :-)
