Slow Cooker Chicken and Rice Soup

Recently, a reader requested my recipe for Crock Pot chicken soup. It was a tough decision to pick only one of several versions I have, but here it is. Enjoy!

Slow Cooker Chicken & Rice Soup

1 Cup Uncooked Regular long grain white rice

7 Cups of Chicken Broth (I use the low sodium, low fat variety)

2 stalks celery, chopped

1 medium onion, chopped

1 lb. boneless, skinless chicken breast, cut into cubes (cut mine while partially frozen as it's easier to cut this way)

2 tsp. dried Thyme leaves, crushed (if you use the leaves already crushed, rub the leaves between the palms of your hand while adding, it releases more flavor)

Salt & Pepper, to taste

Place the chicken cubes, thyme, salt, pepper, celery, onion and chicken cubes to your crock pot.  Pour the chicken broth over all and give it a quick stir.  Turn the setting to LOW and cook for 5 hours. Remove lid and add the white rice.  Stir to combine. Continue to cook an additional 2 hours. 

*Give it a taste after the first 5 hours, before adding rice.  If you like you can add additional seasonings as desired.  It's your soup, add your favorite seasonings and play with it, LOL.  It will be delicious! Happy Crocking!
